A decadent dessert that combines rich chocolate and tart raspberries in layered bliss.

  • 8 oz chocolate wafer cookies
  • 1/2 cup unsalted butter, melted
  • 1 cup raspberry puree
  • 2 cups mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh raspberries for garnish
  • Chocolate shavings for garnish

Instructions

  1. Prepare the crust: Crush chocolate wafer cookies and mix with melted butter. Press into a 9×13-inch baking pan.
  2. Whip the filling: Combine mascarpone, heavy cream, powdered sugar, and vanilla in a bowl. Whip until soft peaks form.
  3. Layer it up: Spread half of the mascarpone mixture over the crust, drizzle half of the raspberry puree on top.
  4. Repeat the layers with the remaining mascarpone mixture and raspberry puree.
  5. Chill to set: Cover and refrigerate for at least 4 hours or overnight.
  6. Garnish and serve: Top with fresh raspberries and chocolate shavings before serving.

Notes

For best results, allow mascarpone to sit at room temperature for 30 minutes before mixing. This dessert can be made a day in advance.
