Lemon Chicken Orzo is a comforting dish that combines succulent chicken breasts with orzo pasta, fresh vegetables, and a zesty lemon flavor.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 lemon, zested and juiced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Sear for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes, or until the onion is translucent.
  3. Add the orzo to the pot and stir for about 1 minute to toast it slightly. Then, pour in the chicken broth, lemon zest, and lemon juice. Bring to a boil, then reduce the heat to a simmer.
  4. Return the chicken to the pot, cover, and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  5. Stir in the cherry tomatoes and spinach, cooking for an additional 2-3 minutes until the spinach is wilted.
  6. Remove from heat and sprinkle with fresh parsley before serving.

Notes

  • Adjust the lemon zest and juice according to your taste preference.
  • This dish is great for meal prep and can be stored in the refrigerator for a few days.
