- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 1–2 tablespoons fresh lemon juice (for glaze)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg, lemon juice, lemon zest, and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet mixture and mix until just combined.
- Scoop tablespoon-sized portions of dough onto prepared baking sheet, spacing evenly.
- Bake for 10–12 minutes, until edges are lightly golden. Remove and cool completely.
- For the glaze, whisk powdered sugar with lemon juice until smooth. Drizzle over cooled cookies.
