  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar
  • 12 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Beat in egg, lemon juice, lemon zest, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture and mix until just combined.
  6. Scoop tablespoon-sized portions of dough onto prepared baking sheet, spacing evenly.
  7. Bake for 10–12 minutes, until edges are lightly golden. Remove and cool completely.
  8. For the glaze, whisk powdered sugar with lemon juice until smooth. Drizzle over cooled cookies.

  • Ensure the butter is at room temperature for better mixing.
  • Don’t overmix the dough to keep the cookies soft.
