Delightful Lemon Curd Cookies bursting with sunny, zesty lemon flavor, soft and buttery with a hint of sweetness.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup lemon curd
  • Zest of 1 lemon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and lemon zest until well combined.
  4. Blend in the flour and salt until just combined.
  5. Drop tablespoon-sized balls of dough onto a lined baking sheet.
  6. Make an indent in the center of each cookie and fill it with a teaspoon of lemon curd.
  7. Bake for 12-15 minutes, or until edges are lightly golden.
  8. Let cool on a wire rack and dust with powdered sugar before serving.

Notes

For best results, cream butter and sugar thoroughly and avoid overfilling the lemon curd.
