1 cup all-purpose flour
1/2 cup unsalted butter, cold and cubed
1/4 cup powdered sugar
1 cup granulated sugar
2 large eggs
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 cup fresh lemon juice
1 tablespoon lemon zest
Powdered sugar for dusting (optional)
Whipped cream for serving (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
In a mixing bowl, combine 1 cup all-purpose flour and 1/4 cup powdered sugar. Cut in the cold, cubed unsalted butter until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared pan. Bake for 15 to 18 minutes until lightly golden.
While the crust is baking, whisk together 1 cup granulated sugar and 2 large eggs until well blended. Add 2 tablespoons all-purpose flour, 1/2 teaspoon baking powder, 1/4 cup fresh lemon juice, and 1 tablespoon lemon zest. Whisk until smooth.
Pour the lemon mixture evenly over the hot crust once it comes out of the oven. Return the pan to the oven and bake for an additional 20 to 25 minutes until the center is set and the top is lightly golden.
Allow the bars to cool completely in the pan on a wire rack. Dust with powdered sugar or serve with whipped cream if desired. Cut into 9 equal bars and enjoy.

Make sure to use fresh lemon juice for the best flavor.
