1 cup orzo pasta
2 cups vegetable broth
1 tablespoon olive oil
1 lemon, zested and juiced
1/4 cup fresh dill, chopped
4 ounces smoked salmon, torn into pieces
1/2 cup cherry tomatoes, halved
Salt and pepper to taste
1/4 cup feta cheese, crumbled (optional)
Instructions
In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.
In a large mixing bowl, combine the cooked orzo, olive oil, lemon zest, and lemon juice. Toss to coat the pasta evenly.
Add the chopped dill, smoked salmon, cherry tomatoes, salt, and pepper to the bowl. Gently fold the ingredients together until well combined.
If desired, sprinkle crumbled feta cheese on top for an extra layer of flavor.
Serve immediately, or refrigerate for 30 minutes to allow the flavors to meld before serving.
