Lemon Herb Grilled Chicken is a delightful zesty treat that brings together vibrant flavors and juicy chicken breasts, perfect for any outdoor gathering or weekday dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, and thyme. Season the marinade with salt and pepper to taste.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the leftover marinade.
  4. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  5. Remove the chicken from the grill and let it rest for 5 minutes before slicing. Serve with your favorite sides and enjoy the zesty flavors!

Notes

  • For a more intense flavor, marinate the chicken for the full 2 hours.
  • This dish can be served with a variety of sides, such as grilled vegetables or a fresh salad.
