Ingredients

  • 8 oz spaghetti or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lb shrimp, peeled and deveined
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package directions in a large pot of salted boiling water until al dente. Drain and set aside, retaining a splash of the pasta water.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  4. Stir in the lemon zest and juice, seasoning with salt and pepper.
  5. Toss the cooked pasta into the skillet with the shrimp mixture, mixing until well combined.
  6. Serve hot, garnished with fresh parsley and grated Parmesan cheese, if desired.
