Lemon Poppy Seed Bagels are a delightful and zesty twist on classic bagels, perfect for breakfast or a snack.

  • 1 cup vanilla or unflavored whey protein powder
  • 2 tablespoons poppy seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/4 cup granulated sugar
  • Zest of 2 lemons
  • 1 cup plain Greek yogurt, non-fat or low-fat
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 2 quarts water (for boiling)
  • 1 tablespoon honey (for boiling)
  • 1 large egg, beaten (for egg wash)
  • 3/4 cup powdered sugar (for lemon glaze)
  • 2 tablespoons fresh lemon juice (for lemon glaze)
  • 1 teaspoon lemon zest (for lemon glaze)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together all dry ingredients until evenly distributed.
  3. In a separate bowl, mix all wet ingredients until smooth and well combined.
  4. Add wet ingredients to dry ingredients and mix until a soft, slightly tacky dough forms.
  5. Divide dough into 8 equal portions, roll into balls, and shape into bagels.
  6. Arrange bagels on the baking sheet, cover, and let rest for 15 minutes.
  7. In a pot, bring water and honey to a gentle boil, then reduce to a simmer.
  8. Boil bagels for 30 seconds on each side, then remove and return to the baking sheet.
  9. Brush boiled bagels with egg wash.
  10. Bake for 18 to 22 minutes until golden brown.
  11. Cool the bagels on a wire rack.
  12. Whisk together ingredients for the lemon glaze until smooth.
  13. Drizzle glaze over cooled bagels and let set before serving.
