1 cup dry lentils (green or brown)
1 tbsp olive oil
1 onion (diced)
2 carrots (sliced)
2 celery stalks (sliced)
3 garlic cloves (minced)
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tsp thyme
1 bay leaf
Salt and pepper to taste
4 large potatoes (peeled and chopped)
½ cup milk
4 tbsp butter

Instructions
In a large pot, sauté onion, carrots, and celery in olive oil until soft.
Add garlic and cook for 1 minute.
Stir in lentils, tomatoes, vegetable broth, thyme, and bay leaf.
Bring to a boil, then simmer for 25-30 minutes until lentils are tender.
Meanwhile, prepare the mashed potatoes by boiling the chopped potatoes until tender, then mashing them with milk, butter, salt, and pepper.
Serve the lentil stew over the mashed potatoes.
Notes
For a spicier version, consider adding red pepper flakes.
