Lime Bars are a refreshing dessert with a tangy lime flavor and a buttery crust, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/3 cup fresh lime juice (about 34 limes)
  • 1 tbsp lime zest
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Crust: In a medium bowl, combine flour, powdered sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into the bottom of the prepared pan and bake for 18-20 minutes until lightly golden.
  3. Filling: Beat together eggs, granulated sugar, flour, lime juice, and zest until well combined. Pour over the baked crust.
  4. Bake for an additional 20-22 minutes, or until the filling is set.
  5. Cool to room temperature, then refrigerate for at least 2 hours.
  6. Dust with powdered sugar, cut into bars, and serve.
