1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, cold and cubed
1/2 tsp salt
2 large eggs
1 cup granulated sugar
2 tbsp all-purpose flour
1/3 cup fresh lime juice (about 3–4 limes)
1 tbsp lime zest
Powdered sugar for dusting
Instructions
Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
Crust: In a medium bowl, combine flour, powdered sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into the bottom of the prepared pan and bake for 18-20 minutes until lightly golden.
Filling: Beat together eggs, granulated sugar, flour, lime juice, and zest until well combined. Pour over the baked crust.
Bake for an additional 20-22 minutes, or until the filling is set.
Cool to room temperature, then refrigerate for at least 2 hours.
Dust with powdered sugar, cut into bars, and serve.
Notes
Ensure to use fresh lime juice for the best flavor.
Can be stored in the refrigerator for up to a week.
