Lime Jello Parfaits are a refreshing dessert made with layers of lime-flavored gelatin and whipped topping, perfect for warm weather.

Ingredients

  • 1 (3 oz) package lime Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1/2 cup ice cubes
  • 1 cup whipped topping (like Cool Whip)
  • Optional: crushed graham crackers or vanilla wafers
  • Optional: lime slices or mint for garnish

Instructions

  1. In a mixing bowl, dissolve lime Jell-O in 1 cup boiling water. Stir until completely dissolved.
  2. Add 1/2 cup cold water and 1/2 cup ice cubes. Stir until the gelatin starts to thicken slightly, then remove any remaining ice.
  3. Set aside 1/2 cup of the gelatin and let cool to room temperature.
  4. Fold whipped topping into the remaining gelatin until smooth and creamy.
  5. Spoon the creamy gelatin mixture into serving glasses, filling each about halfway. Chill in the refrigerator for 30–45 minutes until partially set.
  6. Pour the reserved clear gelatin over the creamy layer in each glass. Chill for another 2–3 hours or until fully set.
  7. Before serving, top with additional whipped topping, crushed cookies, and a slice of lime or mint if desired.

Notes

  • Use clear cups or glasses to show off the layered effect.
  • You can swap lime Jell-O for any flavor for different variations.
  • For added texture, layer with fruit chunks or cookie crumbs between gelatin layers.
