4 bell peppers
1 pound ground beef
1 cup cheddar cheese, shredded
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
4 brioche buns
Instructions
Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds.
In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
Add ground beef, cooking until browned. Stir in paprika, salt, and pepper.
Stuff the bell peppers with the beef mixture and place them in a baking dish.
Cover with foil and bake for 25 minutes.
While the peppers bake, prepare the brioche melts by sautéing additional onions in the skillet until caramelized.
Slice brioche buns in half, add cheese, and top with caramelized onions.
Bake until the cheese is melted and bubbly, about 10–12 minutes.
Serve the loaded peppers warm with the brioche melts on the side.
