- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 medium ripe banana
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat oven to 350°F (175°C).
- Line muffin tin with parchment paper or spray with cooking spray.
- In a mixing bowl, whisk together flour, oats, baking soda, baking powder, cinnamon, and salt.
- Mash the banana in another bowl until smooth.
- Combine Greek yogurt, honey (or maple syrup), egg, and vanilla with the mashed banana.
- Pour wet mixture into dry ingredients and gently fold until just combined.
- Fill muffin cups about 3/4 full with batter.
- Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack.
Notes
- For a vegan option, replace the egg with a flax egg and use maple syrup instead of honey.
- Store leftovers in an airtight container for up to 3 days.
