Mac and Cheese Meatloaf Casserole

A comforting and indulgent casserole that combines savory meatloaf and creamy macaroni and cheese.

Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/4 cup milk (for meatloaf)
  • 1 large egg
  • 2 tbsp breadcrumbs
  • 2 cups uncooked macaroni
  • 2 cups milk (for cheese sauce)
  • 2 tbsp butter
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground beef, diced onion, breadcrumbs, egg, milk, salt, and pepper in a mixing bowl.
  3. Press the mixture into a greased baking dish, forming an even layer.
  4. Bake the meatloaf for 20 minutes.
  5. Cook the macaroni until al dente, drain, and set aside.
  6. In a saucepan, melt the butter and whisk in flour for one minute.
  7. Pour in the milk and whisk until it thickens.
  8. Stir in seasonings and add the cheddar cheese, melting until smooth.
  9. Combine cooked macaroni with the cheese sauce and pour over the meatloaf.
  10. Top with additional cheese and bake for another 25 minutes until bubbly.
  11. Allow the casserole to rest for 10 minutes before slicing.

Notes

Can be prepared the night before and baked when ready. For a lighter option, substitute ground turkey or use gluten-free ingredients as needed.
