1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 large egg
1/2 cup mango puree
1 tablespoon butter, melted
1/2 teaspoon vanilla extract
1 tablespoon vegetable oil
Instructions
In a medium-sized bowl, combine 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
Whisk the dry ingredients together until they are fully incorporated and there are no lumps.
In a separate bowl, crack 1 large egg and beat it lightly with a whisk.
Add 1/2 cup of milk to the egg and continue to whisk until the mixture is smooth and well-blended.
Stir in 1/2 cup of mango puree, 1 tablespoon of melted butter, and 1/2 teaspoon of vanilla extract to the wet ingredients and whisk until everything is thoroughly combined.
Slowly pour the wet ingredients into the dry ingredients, stirring gently with a spoon or spatula as you add them.
Mix until just combined; be careful not to overmix as this can result in dense pancakes.
Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of vegetable oil.
Once the oil is hot, ladle some of the pancake batter onto the skillet, forming pancakes of your desired size.
Cook the pancakes for about 2-3 minutes on the first side, or until small bubbles begin to form on the surface.
Flip the pancakes carefully using a spatula and cook for another 1-2 minutes on the other side, or until golden brown and cooked through.
Remove the pancakes from the skillet and transfer them to a plate.
Repeat the process with the remaining batter, adding more oil to the skillet as necessary.
Serve the mango pancakes warm with your favorite toppings.
Notes
For a richer flavor, use whole milk instead of skim milk.
Try adding chopped nuts or additional fruit as a topping.
These pancakes can be frozen and reheated for a quick breakfast option.
