Marinated Cucumbers, Onions, and Tomatoes

A refreshing and tangy salad featuring marinated cucumbers, onions, and tomatoes.

Ingredients

  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tbsp chopped fresh parsley or dill
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Wash and slice the cucumbers, halve the tomatoes, and thinly slice the onion.
  2. In a mixing bowl, whisk together vinegar, olive oil, garlic, salt, and pepper. Add red pepper flakes if using.
  3. Combine cucumbers, tomatoes, and onions in a large bowl.
  4. Pour the marinade over the vegetables and toss gently to coat evenly.
  5. Cover and refrigerate for at least 30 minutes, preferably a few hours or overnight.
  6. Toss again before serving and garnish with fresh herbs.

Notes

  • For best flavor, allow the mixture to marinate for several hours or overnight.
  • Can be served as a side dish or a light salad.
