2 pounds fresh ground beef
1 cup breadcrumbs
1 onion, finely chopped
2 cloves garlic, minced
2 large eggs, beaten
¼ cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and freshly ground black pepper to taste
2 cups fresh mushrooms, sliced
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups beef broth
½ cup heavy cream

Instructions
Preheat your oven to 350°F (175°C) and prepare a casserole dish or line a baking sheet with parchment paper.
In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix gently.
Shape the mixture into a loaf and place it in the prepared dish. Bake for 50-60 minutes until a thermometer reads 160°F (71°C).
For the mushroom gravy, melt butter in a skillet over medium heat. Add mushrooms and cook until golden brown, about 5-7 minutes.
Sprinkle flour over the mushrooms and stir for 2 minutes. Gradually whisk in beef broth and cream, stirring until the gravy thickens, about 5-7 minutes. Season to taste.
Let the meatloaf rest for a few minutes before slicing and serving with the mushroom gravy.
Notes
You can lighten up this recipe by using ground turkey or chicken instead of beef.
