A refreshing Mediterranean Avocado Salad packed with creamy avocados, crisp cucumbers, and juicy tomatoes. Perfect for a healthy lunch or dinner.

Ingredients

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions
