1 pound ground chicken
1/2 cup breadcrumbs
1/4 cup crumbled feta cheese
1/4 cup finely chopped Kalamata olives
1/4 cup chopped fresh parsley
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg, beaten
2 tablespoons olive oil (for cooking)
Instructions
In a large mixing bowl, thoroughly combine the ground chicken, breadcrumbs, feta cheese, olives, parsley, minced garlic, oregano, paprika, salt, pepper, and beaten egg. Ensure the ingredients are well blended and the mixture is cohesive.
Divide the chicken mixture into 8 to 10 equal portions. Shape each portion into a patty about 2 to 3 inches in diameter, making sure they maintain their shape.
In a large skillet, heat the olive oil over medium heat. Add the patties, ensuring not to overcrowd the pan, and cook them in batches. Sear each patty for about 5 to 6 minutes on each side, until golden brown and the internal temperature reaches 165°F.
Place the cooked patties on a paper towel-lined plate to absorb excess oil. Enjoy them hot alongside tzatziki, a crisp Mediterranean salad, or your choice of accompaniments.
Notes
Serve with tzatziki for extra flavor.
These patties can be made ahead and frozen for later use.
