Mediterranean Chicken Skewers are a flavorful grilled dish featuring marinated chicken, bell peppers, and onions cooked to perfection.

  • 1 pound chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken, bell peppers, and onion onto the skewers, alternating between the chicken and vegetables.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken for longer if time allows.
