Delightful peanut butter cookies topped with fluffy marshmallows and drizzled with white chocolate, resembling cute little snowmen.

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup white chocolate chips or melting chocolate
  • Chocolate chips or candy eyes for decoration

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the peanut butter, sugar, egg, and vanilla extract until well combined.
  3. Roll the dough into balls approximately the size of a tablespoon, and place them on a baking sheet lined with parchment paper.
  4. Bake for about 10-12 minutes, or until the edges turn a lovely golden brown.
  5. Remove the cookies from the oven and allow them to cool slightly on the baking sheet.
  6. Press a mini marshmallow onto the top of each cookie while still warm.
  7. Melt the white chocolate chips according to package instructions until smooth.
  8. Drizzle the melted white chocolate over the marshmallow-topped cookies.
  9. Add chocolate chips or candy eyes for decoration.
  10. Allow the cookies to cool completely before serving.

Notes

Let the egg and peanut butter come to room temperature for the best mixing results. Watch the cookies to ensure they turn golden but don’t overbake.
