Spread the seasoned potatoes in a single layer on a baking sheet.

Serve the Mexican potatoes hot as a delicious side dish or snack. Enjoy!
Notes
For a spicier version, increase the amount of chili powder or add a dash of cayenne pepper.
You can customize the seasoning to suit your taste preferences by adjusting the quantities of the herbs and spices.
Make sure to space the potato cubes evenly on the baking sheet to ensure they cook uniformly and get crispy.
Feel free to garnish the finished dish with chopped fresh cilantro, a squeeze of lime juice, or a dollop of sour cream for extra flavor.
Leftovers can be refrigerated and reheated in the oven for a few minutes to maintain their crispiness.
