Luxurious bars with layers of buttery shortbread, gooey caramel, and silky chocolate.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (for the caramel layer)
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 can sweetened condensed milk
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking pan with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Gradually add in the flour and salt, mixing until just combined to form the shortbread dough.
  4. Press the dough evenly into the bottom of the prepared pan and bake for 20-25 minutes until lightly golden.
  5. Melt the 1/2 cup of butter in a saucepan and stir in the brown sugar, corn syrup, and sweetened condensed milk, cooking until thickened.
  6. Pour the caramel layer over the baked shortbread base and spread evenly.
  7. Bake for another 10-15 minutes until the caramel is set.
  8. Cool completely before melting the chocolate chips and pouring over the caramel layer.
  9. Chill in the refrigerator until the chocolate is firm, then cut into bars.

Notes

Chill the bars before cutting for cleaner slices and use room temperature butter for better mixing.
