Delightful cookies with buttery shortbread, gooey caramel, and rich chocolate, perfect for snacks or special occasions.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup chocolate chips
  • Sea salt for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the flour and cornstarch until well combined to form a dough.
  4. Press the mixture into a greased 8-inch square baking pan and bake for 20-25 minutes until golden brown.
  5. Cool completely in the pan, then spread a layer of caramel sauce over the baked shortbread.
  6. Melt the chocolate chips over low heat until smooth, then drizzle or spread over the caramel.
  7. Cut into squares or sandwich with caramel and chocolate, then chill in the fridge.

Notes

Chill the caramel if it’s too runny; use a metal pan for crispy edges.
