1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
1 teaspoon vanilla extract
1 cup mini marshmallows

Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
Press the graham cracker mixture firmly into the bottom and up the sides of a mini tart pan or muffin tin, creating a crust. Bake in the preheated oven for about 8-10 minutes, or until golden brown. Remove from the oven and let cool completely.
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped semi-sweet chocolate and vanilla extract. Let it sit for a minute, then stir until smooth and glossy.
Once the crusts have cooled, pour the chocolate ganache evenly into each tart shell, filling them to the top. Allow the ganache to set at room temperature for about 30 minutes.
Preheat your broiler. Once the ganache has set, top each tart with mini marshmallows, arranging them in a single layer. Place the tarts under the broiler for about 1-2 minutes, or until the marshmallows are golden brown and toasted. Keep a close eye on them to prevent burning.
Remove the tarts from the oven and let them cool slightly. Drizzle melted chocolate over the top and sprinkle with chocolate shavings for an elegant finish.
