Mini Turtle Cheesecakes are a delightful dessert that combines creamy cheesecake with rich caramel, chocolate, and crunchy pecans, all served in a convenient mini format.

Ingredients

  • 1 cup graham cracker crumbs
  • 4 Tbsp unsalted butter (melted)
  • 16 oz full-fat cream cheese (softened)
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • Jarred caramel sauce
  • Chocolate ganache (½ cup chocolate chips & ¼ cup heavy cream)
  • Chopped pecans

Instructions

  1. Preheat oven to 325°F (163°C) and grease a mini muffin tin.
  2. Mix graham cracker crumbs and melted butter until combined. Press into each muffin cup.
  3. Beat cream cheese until smooth; add sugar and vanilla, then mix in eggs one at a time.
  4. Fill crusts with cheesecake mixture and bake for about 20 minutes until set around edges.
  5. Cool before refrigerating for at least four hours; top with caramel sauce, chocolate ganache, and chopped nuts before serving.

Notes

  • For best results, allow the cheesecakes to cool completely before refrigerating.
  • These can be made a day in advance for convenience.
