1 cup graham cracker crumbs
4 Tbsp unsalted butter (melted)
16 oz full-fat cream cheese (softened)
½ cup granulated sugar
1 tsp vanilla extract
2 large eggs
Jarred caramel sauce
Chocolate ganache (½ cup chocolate chips & ¼ cup heavy cream)
Chopped pecans
Instructions
Preheat oven to 325°F (163°C) and grease a mini muffin tin.
Mix graham cracker crumbs and melted butter until combined. Press into each muffin cup.
Beat cream cheese until smooth; add sugar and vanilla, then mix in eggs one at a time.
Fill crusts with cheesecake mixture and bake for about 20 minutes until set around edges.
Cool before refrigerating for at least four hours; top with caramel sauce, chocolate ganache, and chopped nuts before serving.
Notes
For best results, allow the cheesecakes to cool completely before refrigerating.
