4 boneless, skinless chicken breasts
1 cup mozzarella cheese, shredded
1/2 cup fresh spinach, chopped
1/4 cup sun-dried tomatoes, chopped
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons fresh basil, chopped
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
In a bowl, combine the mozzarella cheese, spinach, and sun-dried tomatoes. Season with salt and pepper. Stuff each chicken breast with the cheese mixture, securing the openings with toothpicks if necessary.
In a separate bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, and fresh basil. Season with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium heat. Dredge each stuffed chicken breast in the breadcrumb mixture, pressing gently to adhere.
Place the chicken breasts in the skillet and cook for 3-4 minutes on each side, or until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
Notes
Use toothpicks to secure the openings of the chicken breasts if needed.
Feel free to add additional spices or herbs to customize the flavor.
