Mozzarella Stuffed Chicken is a flavorful dinner delight featuring chicken breasts stuffed with gooey mozzarella cheese, fresh spinach, and sun-dried tomatoes, all baked to perfection.

  • 4 boneless, skinless chicken breasts
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  3. In a bowl, combine the mozzarella cheese, spinach, and sun-dried tomatoes. Season with salt and pepper. Stuff each chicken breast with the cheese mixture, securing the openings with toothpicks if necessary.
  4. In a separate bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, and fresh basil. Season with salt and pepper.
  5. Heat olive oil in a large oven-safe skillet over medium heat. Dredge each stuffed chicken breast in the breadcrumb mixture, pressing gently to adhere.
  6. Place the chicken breasts in the skillet and cook for 3-4 minutes on each side, or until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.

Notes

  • Use toothpicks to secure the openings of the chicken breasts if needed.
  • Feel free to add additional spices or herbs to customize the flavor.
  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
