An easy and creamy No Bake Pumpkin Cheesecake that’s perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup whipped cream

Instructions

  1. In a bowl, mix the graham cracker crumbs and melted butter until fully combined. Press the mixture firmly into the bottom of a springform pan.
  2. In a separate bowl, beat the cream cheese until smooth. Add the powdered sugar gradually, mixing until silky smooth.
  3. Add in the pumpkin puree, vanilla, and spices. Stir until mixed well.
  4. Fold in the whipped cream gently until fully incorporated.
  5. Pour the pumpkin filling over your crust and refrigerate for at least 240 minutes, or until set.
  6. Slice and serve chilled, optionally topping with whipped cream.

Notes

Make sure to chill for sufficient time to let the cheesecake set. Use room temperature ingredients for best results.
