4 boneless, skinless chicken breasts
1 cup cherry tomatoes, halved
1 zucchini, sliced
1 red onion, cut into wedges
1 bell pepper, sliced
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Fresh basil for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine balsamic vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk until the mixture is well blended.
Add the chicken breasts to the marinade, ensuring they are thoroughly coated. Allow them to marinate for at least 15 minutes.
Arrange the marinated chicken breasts in the center of a large baking dish or sheet pan. Surround them with cherry tomatoes, zucchini, red onion, and bell pepper.
Drizzle any leftover marinade over the vegetables and chicken.
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C), and the vegetables are tender.
Remove the dish from the oven and let it rest for a few minutes. Garnish with fresh basil before serving.
Notes
For best results, allow the chicken to marinate longer if time permits.
