  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the olive oil, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Add the chicken thighs to the bowl, ensuring they are evenly coated with the mixture.
  4. Toss the broccoli, bell peppers, zucchini, and cherry tomatoes in a separate bowl with olive oil, salt, and pepper.
  5. Place the chicken thighs in a large oven-safe pan or baking dish.
  6. Scatter the seasoned vegetables around the chicken.
  7. Drizzle the BBQ sauce over the chicken thighs.
  8. Bake for 35-40 minutes or until the chicken is cooked through (165°F internal temperature).
  9. Garnish with fresh parsley before serving.

Notes

To save time, marinate the chicken overnight. You can also use an air fryer for quicker cooking.
