One Pan Smoky BBQ Sausage Rice

A quick and easy one-pan dish combining smoky sausage, earthy rice, and a hint of BBQ sauce for a flavor-packed meal.

Ingredients

  • 1 pound smoked sausage, sliced
  • 1 cup uncooked rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 2 tablespoons BBQ sauce
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Sauté the sausage in a large skillet with a little oil over medium heat until browned, about 4-5 minutes.
  2. Add the diced onion, bell pepper, and minced garlic; cook until the onion is soft, about 3-4 minutes.
  3. Combine the rice, diced tomatoes, chicken broth, BBQ sauce, smoked paprika, salt, and pepper; bring to a boil.
  4. Simmer on low, covered, for about 20 minutes until the rice is cooked and the liquid is absorbed.
  5. Fluff the rice with a fork, garnish with parsley, and serve warm.

Notes

For a vegetarian version, use a plant-based sausage and vegetable broth.
