A quick and delicious dish made with pasta, ricotta cheese, and fresh ingredients, all cooked in one pot.

Ingredients

  • 12 oz of your favorite pasta
  • 1 cup ricotta cheese
  • Zest and juice from 1 lemon
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 4 cups vegetable broth
  • 1 cup halved cherry tomatoes
  • 1 cup fresh spinach leaves
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Sauté the minced garlic for about a minute until it becomes fragrant.
  2. Pour in the vegetable broth, pasta, lemon zest, and lemon juice. Bring everything to a boil.
  3. Lower the heat and let it simmer for 10 to 12 minutes, stirring occasionally until the pasta is cooked and most of the broth is absorbed.
  4. Stir in the ricotta cheese, cherry tomatoes, and spinach. Cook for an additional 2 to 3 minutes until the spinach wilts and the tomatoes become soft.
  5. Take the skillet off the heat and mix in the Parmesan cheese. Season with salt and pepper to your preference.
  6. Serve immediately, topped with fresh basil for added flavor.

Notes

  • For a lighter version, you can reduce the amount of ricotta cheese.
  • Feel free to add other vegetables like zucchini or bell peppers.
  • This dish can be made ahead of time and reheated for a quick meal.
