A flavorful and easy one-pot dinner featuring tender chicken thighs infused with Mediterranean flavors from olives, garlic, and lemon.

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup green olives, pitted and halved
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the pot, skin-side down. Sear for about 5-7 minutes until the skin is golden brown.
  2. Flip the chicken and cook for an additional 5 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the sliced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Add the lemon zest, lemon juice, olives, oregano, and thyme. Stir to combine.
  5. Return the chicken to the pot, skin-side up, and bring the mixture to a simmer. Cover the pot and reduce the heat to low. Cook for 30-35 minutes, or until the chicken is cooked through and tender.
  6. Once done, remove the pot from heat and let it rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can marinate the chicken thighs in lemon juice and herbs for a few hours before cooking.
  • Serve with rice, couscous, or a fresh salad for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
