One-Pot Pasta with Ground Turkey & Spinach is a delicious and easy meal that combines pasta, ground turkey, and fresh spinach in a creamy sauce.

  • 12 ounces penne or rotini pasta
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups fresh spinach
  • 1 can (14.5 ounces) diced tomatoes with juices
  • 3 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Warm olive oil in a large pot over medium heat. Sauté the onion for 3-4 minutes until it becomes soft and translucent. Add the garlic and cook for 1 minute more until aromatic.
  2. Introduce the ground turkey, breaking it into pieces with a spatula. Cook for 5-7 minutes until browned and thoroughly cooked, seasoning with salt, pepper, and Italian seasoning.
  3. Stir in the diced tomatoes and their juices, along with the chicken broth. Bring everything to a boil, then add the pasta, making sure it is submerged in the liquid.
  4. Reduce the heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally until the pasta is tender and most of the liquid has been absorbed.
  5. Add the fresh spinach, stirring until it wilts, around 2-3 minutes. Remove from heat and blend in the grated Parmesan cheese until the dish becomes creamy.
  6. Serve hot, garnished with fresh basil if desired.

Notes

  • Feel free to substitute the ground turkey with ground chicken or beef if preferred.
  • Adjust the seasoning according to your taste.
  • You can add other vegetables like bell peppers or zucchini for more nutrition.
