12 ounces penne or rotini pasta
1 pound ground turkey
2 tablespoons olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
4 cups fresh spinach
1 can (14.5 ounces) diced tomatoes with juices
3 cups chicken broth
1 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup grated Parmesan cheese
Fresh basil for garnish (optional)
Instructions
Warm olive oil in a large pot over medium heat. Sauté the onion for 3-4 minutes until it becomes soft and translucent. Add the garlic and cook for 1 minute more until aromatic.
Introduce the ground turkey, breaking it into pieces with a spatula. Cook for 5-7 minutes until browned and thoroughly cooked, seasoning with salt, pepper, and Italian seasoning.
Stir in the diced tomatoes and their juices, along with the chicken broth. Bring everything to a boil, then add the pasta, making sure it is submerged in the liquid.
Reduce the heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally until the pasta is tender and most of the liquid has been absorbed.
Add the fresh spinach, stirring until it wilts, around 2-3 minutes. Remove from heat and blend in the grated Parmesan cheese until the dish becomes creamy.
Serve hot, garnished with fresh basil if desired.
Notes
Feel free to substitute the ground turkey with ground chicken or beef if preferred.
Adjust the seasoning according to your taste.
You can add other vegetables like bell peppers or zucchini for more nutrition.
