12 oz penne or rotini pasta
1 lb ground turkey
2 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
4 cups fresh spinach
1 can (14.5 oz) diced tomatoes with juices
3 cups chicken broth
1 tsp Italian seasoning
Salt and pepper to taste
1/2 cup grated Parmesan cheese
Fresh basil for garnish (optional)
Instructions
Heat olive oil in a large pot over medium heat. Sauté the onion for 3-4 minutes until it becomes soft and translucent, then add the garlic and cook for another minute until aromatic.
Add the ground turkey, breaking it apart with a spatula. Cook for 5-7 minutes until it browns and is fully cooked, seasoning with salt, pepper, and Italian seasoning.
Stir in the diced tomatoes along with their juices and the chicken broth. Bring to a boil before adding the pasta, ensuring it is fully submerged in the mixture.
Reduce the heat to a simmer, cover the pot, and cook for 10-12 minutes, stirring occasionally, until the pasta reaches the desired tenderness and much of the liquid has been absorbed.
Fold in the fresh spinach, cooking until it wilts, about 2-3 minutes. Remove from heat and blend in the Parmesan cheese until the pasta achieves a creamy texture.
Notes
For a vegetarian option, replace ground turkey with a plant-based ground meat alternative.
Feel free to add other vegetables like bell peppers or zucchini for added nutrition.
This dish can be made ahead of time and reheated for meal prep.
