One Pot Taco Macaroni

A comforting, hearty dish that combines Tex-Mex flavors with creamy macaroni, perfect for family gatherings and busy weeknights.

Ingredients

  • 1 pound ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups elbow macaroni
  • 3 cups beef broth
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped cilantro and sliced jalapeños for garnish (optional)

Instructions

  1. Brown the meat in a large pot over medium heat until browned, breaking apart with a wooden spoon. Drain excess fat.
  2. Sauté the chopped onion until translucent, about 3-4 minutes, then add minced garlic and stir for 1 minute.
  3. Sprinkle in the taco seasoning and stir well, then pour in the beef broth, diced tomatoes, and corn.
  4. Bring the mixture to a gentle boil, stirring occasionally.
  5. Add the elbow macaroni, cover pot, reduce heat to low, and simmer for 10-12 minutes until macaroni is tender.
  6. Remove from heat and stir in cheddar cheese and sour cream until well combined.
  7. Season with salt and pepper to taste, and serve warm garnished with cilantro and jalapeños.
