4 cups Rice Krispies cereal
1 cup crumbled Mint Oreo Cookies
1/4 cup butter
4 cups mini marshmallows, divided
1/2 teaspoon mint extract
1–2 drops green food coloring (optional)
1/2 cup chocolate pieces (chocolate chips or chopped chocolate bar)
Instructions
In a large mixing bowl, combine Rice Krispie cereal and crumbled Mint Oreo Cookies. Set aside.
In a saucepan over low heat, melt the butter. Once melted, add the mini marshmallows. Stir continuously until the marshmallows are fully melted and the mixture is smooth.
Stir in the mint extract. If desired, add a few drops of green food coloring for added color.
Pour the melted marshmallow mixture over the cereal and cookies. Stir until all ingredients are evenly coated.
Fold in the chocolate pieces.
Transfer the mixture to a lightly greased 8×8 pan. Using wax or parchment paper, press down on the mixture until it’s evenly flattened.
Allow the treats to cool completely. To expedite cooling, you can place them in the fridge for about 5 minutes.
Once cooled, cut into squares and serve.
Notes
Store leftovers in an airtight container to keep them fresh.
Feel free to experiment with different types of chocolate.
