1 cup orzo pasta
2 tablespoons olive oil
2 cloves garlic, minced
4 cups fresh spinach, chopped
1/2 cup vegetable broth
1/2 cup goat cheese, crumbled
Salt and pepper to taste
Fresh lemon juice (optional)
Fresh parsley, chopped (for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted.
Pour in the vegetable broth and bring to a simmer. Allow it to cook for another 2-3 minutes to reduce slightly.
Stir in the cooked orzo and crumbled goat cheese, mixing well until the cheese is melted and creamy. Season with salt and pepper to taste.
For an extra zing, drizzle with fresh lemon juice before serving. Garnish with chopped parsley for a pop of color.
