Ingredients

  • Bratwurst: 4-6 high-quality bratwurst sausages (pork or chicken)
  • Beer: 1 bottle (12 oz) of your favorite lager or ale (or apple cider for a non-alcoholic option)
  • Onions: 2 large yellow onions, thinly sliced
  • Butter: 2 tablespoons unsalted butter (or olive oil)
  • Garlic: 3 cloves, minced
  • Brown Sugar: 1 tablespoon
  • Salt: to taste
  • Pepper: to taste
  • Fresh Thyme: 1 teaspoon (or ½ teaspoon dried thyme)
  • Mustard: for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in an oven-safe skillet over medium heat, add onions and salt, and cook until soft and caramelized (about 15 minutes). Add brown sugar and garlic; cook for another 5 minutes.
  3. Push onions to the side and add bratwurst, searing on all sides for about 5 minutes.
  4. Add beer and thyme, scrape the skillet to deglaze, and bring to a simmer.
  5. Cover and transfer to the oven; braise for 30-40 minutes.
  6. Let rest for a few minutes, then serve with caramelized onions and mustard.

Notes

  • Feel free to use apple cider for a non-alcoholic version.
