A flavorful dish featuring oven-roasted Cajun chicken paired with garlic-infused baby red potatoes, all topped with Parmesan cheese.

Ingredients

Scale
  • 1.5 lbs chicken breast or thighs, cut into chunks
  • 1.5 lbs baby red potatoes, quartered
  • 3 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1/3 cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 425°F (220°C). Cut chicken and potatoes into bite-sized chunks. Mince garlic.
  2. In a large bowl, combine chicken, potatoes, olive oil, Cajun seasoning, and garlic. Toss until evenly coated.
  3. Spread the mixture onto a large baking sheet in a single layer, avoiding overcrowding.
  4. Roast for 25–30 minutes, flipping halfway, until chicken is cooked through and potatoes are golden.
  5. Garnish with parsley and Parmesan before serving.

Notes

  • For crispier potatoes, ensure they are well spaced on the baking sheet.
  • Use freshly grated Parmesan for the best flavor and melting quality.
  • If you prefer less heat, opt for a mild Cajun seasoning blend or reduce the amount used.
