4 chicken thighs, bone-in and skin-on
2 tablespoons olive oil
1 onion, sliced
3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear for about 5-7 minutes until the skin is golden brown.
Flip the chicken and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced onion and sauté for 3-4 minutes until softened.
Add the minced garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes, and stir in the dried oregano, dried basil, and red pepper flakes if using. Bring the sauce to a simmer.
Return the chicken thighs to the skillet, skin-side up, and cover. Let it simmer on low heat for about 25-30 minutes, or until the chicken is cooked through and tender.
Taste the sauce and adjust seasoning with salt and pepper as needed.
Serve the chicken hot, garnished with fresh basil leaves, alongside crusty bread or over pasta.
