Delightful pastel-colored sugar cookie sandwiches filled with your favorite frosting, perfect for any occasion.

Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ teaspoon salt
  • Food coloring (pastel shades)
  • Frosting for filling (your choice of flavor)

Instructions

  1. Preheat the oven to 350°F (175°C) so it’s hot and ready when you need it.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add the egg, vanilla, and almond extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Divide the dough into portions and mix in food coloring to achieve desired pastel shades.
  7. Roll the dough into balls and place them on baking sheets lined with parchment paper.
  8. Bake for 8-10 minutes until lightly golden.
  9. Let them cool on a wire rack.
  10. Spread frosting on the bottom side of one cookie and top with another cookie to create a sandwich.

Notes

For best results, let your butter come to room temperature and avoid overmixing the dough.
