Delightful pastel sugar cookie sandwiches filled with dreamy frosting, perfect for parties or cozy evenings.

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Colorful frosting (store-bought or homemade)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine flour, baking soda, and baking powder in a bowl. Set aside.
  3. Cream together the softened butter and sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually blend in the dry ingredients until just combined.
  6. Roll dough into small balls and place on a lined baking sheet. Flatten each ball slightly.
  7. Bake for 8-10 minutes or until edges are lightly golden.
  8. Let them cool completely on a wire rack.
  9. Spread colorful frosting between two cookies to create sandwiches. Finish with sprinkles if desired.

Notes

Make sure your butter is softened for better mixing. Chill dough if too sticky.
