8 ounces cream cheese (softened)
1 1/4 cups powdered sugar
8 ounces whipped topping (thawed)
3 ounces peach-flavored gelatin
30.5 ounces canned sliced peaches (drained and diced or 5–6 fresh peeled, pitted and diced)
2 1/2 cups mini marshmallows
½ cup pecans (finely chopped)
Instructions
Using a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat together 8 ounces cream cheese and 1 ¼ cups powdered sugar for 1½ to 2 minutes, until smooth.
Whisk in 8 ounces whipped topping and 3 ounces peach-flavored gelatin.
Fold in 30.5 ounces canned sliced peaches and 2 ½ cups mini marshmallows. Tightly cover and chill in the refrigerator for 2 hours.
Just before serving, fold in ½ cup pecans. Serve chilled.
Notes
This dish can be made a day ahead and stored in the refrigerator.
For a fresher taste, use fresh peaches instead of canned.
