A delightful summer treat, peach mochi features a chewy exterior filled with fresh peaches and fluffy whipped cream.

Ingredients

  • Fresh Peaches
  • Mochi Flour (Sweet Rice Flour)
  • Sugar
  • Water
  • Cornstarch (For Dusting)
  • Sweetened Whipped Cream (For Filling)

Instructions

  1. Prepare the peaches: Wash and peel the peaches. Cut them in half and remove the pits.
  2. Make the dough: In a mixing bowl, combine 1 cup of mochi flour with 1/4 cup of sugar and 3/4 cup of water. Stir until a smooth paste forms.
  3. Microwave the mixture: Transfer the mixture into a microwave-safe dish. Microwave for about 1-2 minutes, stirring halfway through.
  4. Dust your surface: Generously sprinkle cornstarch on a clean surface to prevent sticking.
  5. Portion your dough: Divide the dough into small pieces, roughly the size of a golf ball. Flatten each piece into a disc.
  6. Wrap the peaches: Place a peach half in the center of a dough disc and carefully wrap the dough around it.
  7. Serve: Enjoy each peach mochi with a dollop of sweetened whipped cream either on the side or inside.

Notes

Peach mochi can be stored in the fridge for up to a week and can also be frozen for longer storage.
