250 g creamy peanut butter
200 g granulated sugar
1 large egg
5 ml vanilla extract
135 g semi-sweet chocolate chips
18 peanut butter chocolate chip cookies
9 squares dark chocolate
9 large marshmallows
Instructions
Preheat the oven to 180°C and line a baking sheet with parchment paper.
In a stand mixer bowl, add peanut butter, granulated sugar, egg, and vanilla extract. Mix until thoroughly combined. Gently fold in the chocolate chips.
Portion approximately 1 tablespoon of dough for each cookie, roll into balls, and place onto the prepared baking sheet. Flatten each ball slightly, ensuring a 2.5 cm gap between cookies.
Bake for approximately 10 minutes or until cookies are golden at the edges. Allow to cool completely before use.
Place 9 cookies upside down and top each with a square of dark chocolate. Roast each marshmallow until golden and place atop the chocolate. Cover with a second cookie, gently pressing to create a sandwich.
Notes
Make sure to allow the cookies to cool completely before assembling the s’mores.
