Peanut Butter Choc Chip S’mores – Gooey, Chocolatey & Loaded with Peanut Butter Bliss!

Indulge in the delicious combination of peanut butter and chocolate in these delightful s’mores.

Ingredients

  • 250 g creamy peanut butter
  • 200 g granulated sugar
  • 1 large egg
  • 5 ml vanilla extract
  • 135 g semi-sweet chocolate chips
  • 18 peanut butter chocolate chip cookies
  • 9 squares dark chocolate
  • 9 large marshmallows

Instructions

  1. Preheat the oven to 180°C and line a baking sheet with parchment paper.
  2. In a stand mixer bowl, add peanut butter, granulated sugar, egg, and vanilla extract. Mix until thoroughly combined. Gently fold in the chocolate chips.
  3. Portion approximately 1 tablespoon of dough for each cookie, roll into balls, and place onto the prepared baking sheet. Flatten each ball slightly, ensuring a 2.5 cm gap between cookies.
  4. Bake for approximately 10 minutes or until cookies are golden at the edges. Allow to cool completely before use.
  5. Place 9 cookies upside down and top each with a square of dark chocolate. Roast each marshmallow until golden and place atop the chocolate. Cover with a second cookie, gently pressing to create a sandwich.

Notes

  • Make sure to allow the cookies to cool completely before assembling the s’mores.
  • Feel free to adjust the amount of chocolate and marshmallows to your taste.
