1 can Pillsbury Crescent Rolls
3/4 cup chopped pecans
1/2 cup granulated sugar
1/2 cup light corn syrup
2 Tbsp unsalted butter, melted
1 tsp pure vanilla extract
1 large egg
Instructions
Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper and set aside.
In a large bowl, combine sugar, corn syrup, melted butter, vanilla extract, and egg. Reserve 2 tablespoons of this mixture for later use.
Stir the chopped pecans into the remaining sugar mixture until evenly coated.
Unroll the crescent dough and separate into individual triangles on the prepared baking sheet. Spoon 2 to 3 tablespoons of the pecan filling onto the widest end of each triangle. Roll up towards the narrow end.
Bake rolls in the preheated oven for 8 minutes until they begin to set.
Remove rolls from oven and brush each with the reserved 2 tablespoons of sugar mixture. Return to oven and bake for an additional 5 minutes or until lightly golden brown.
Remove from oven and, if desired, sprinkle additional chopped pecans on top before serving.
Notes
For extra flavor, consider adding a pinch of cinnamon to the filling.
These are best served warm but can be stored in the fridge for a few days.
