Ingredients

  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup fresh mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 1/2 cup pesto sauce
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, black olives, fresh mozzarella, and chopped basil.
  3. Add the pesto sauce to the bowl and gently toss until all ingredients are well coated.
  4. Season with salt and pepper to taste, adjusting as necessary.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
