Juicy pork tenderloin marinated in BBQ sauce and grilled with fresh pineapple and vegetables for a delightful summer meal.

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 1 fresh pineapple, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the grill to medium heat.
  2. Combine the pork, pineapple, red onion, and green bell pepper in a large bowl.
  3. Prepare the saucy mixture by whisking BBQ sauce, olive oil, soy sauce, garlic powder, and black pepper in a small bowl.
  4. Marinate the pork and vegetables with the BBQ sauce mixture.
  5. Skewer the pork and vegetables onto skewers.
  6. Grill the skewers for about 15-20 minutes, turning occasionally.
  7. Add remaining BBQ sauce during the last few minutes of grilling, if desired.
  8. Serve hot and enjoy!

Notes

Marinate the skewers a few hours ahead for deeper flavors. Can substitute chicken or other vegetables if desired.
